Ingredients
- 6 sheets filo pastry
- 60g butter, melted
- 700g tart apples, peeled and thinly sliced
- 60g breadcrumbs
- 70g caster sugar
- 1 tsp ground cinnamon
- 60g raisins
- Zest of 1 lemon
- 1 egg, beaten
- Icing sugar to dust
- Warm vanilla sauce to serve
Method
Heat the oven to 190C and line a baking tray.
Mix the apples, breadcrumbs, sugar, cinnamon, raisins, and lemon zest.
Lay out the filo sheets, brushing each with melted butter as you stack them.
Spoon the apple filling along one long edge, leaving a border at each end.
Fold in the sides and roll into a neat strudel.
Place seam-side down, brush with beaten egg, and bake for 30-35 minutes until crisp and golden.
Rest for 10 minutes, dust with icing sugar, and serve with warm vanilla sauce.

Lovely with vanilla sauce. The pastry needs a gentle touch but the result is well worth it.
