Ingredients
- 650g mackerel or white fish steaks
- 1 tsp rapeseed oil
- 1 onion, chopped
- 2 garlic cloves, crushed
- 15g fresh ginger, grated
- 1 tbsp tamarind paste
- 400g chopped tomatoes
- 200g okra, trimmed
- 1 red chilli, sliced
- 300g cooked rice
Method
Check the fish for bones, pat it dry, and prepare the vegetables and sides before cooking.
Cook onion, garlic, ginger, tamarind, tomatoes, chilli, and a splash of water into a sharp sauce.
Add the fish and okra, then simmer gently until the fish is cooked and the okra is tender.
Serve with rice and extra lime if liked.
