Ingredients
- 650g haddock fillets
- 50g wholemeal breadcrumbs
- 1 tbsp olive oil
- Small handful parsley, chopped
- 1 lemon, zested and juiced
- 450g potatoes, boiled
- 250g peas
- Black pepper
- Lemon wedges
- 200g salad leaves
Method
Check the fish for bones, pat it dry, and prepare the vegetables and sides before cooking.
Mix breadcrumbs, olive oil, parsley, lemon zest, and black pepper.
Press the crumb over the haddock and bake at 190C for 10-12 minutes.
Serve with potatoes, peas, salad leaves, and lemon.
