Ingredients

  • 4 salmon fillets
  • 500g new potatoes, cooked and halved
  • 120g mixed salad leaves
  • 1 cucumber, sliced
  • 200g cherry tomatoes, halved
  • 2 tbsp olive oil
  • 1 lemon, juiced
  • 1 tbsp chopped dill
  • 1 tsp wholegrain mustard
  • Salt and black pepper

Method

Heat the oven to 200C/180C fan/gas 6.

Season the salmon and bake for 12-14 minutes until just cooked.

Whisk the olive oil, lemon juice, dill, mustard, salt, and pepper.

Toss the potatoes, leaves, cucumber, and tomatoes with most of the dressing.

Top with the warm salmon and spoon over the remaining dressing.
