Ingredients
- 800g ripe pears, cored and sliced
- 30g fresh ginger, finely grated
- 1 lemon, zest and juice
- 1 tbsp cornflour
- 35g light brown sugar
- 120g rolled oats
- 80g wholemeal flour
- 50g cold unsalted butter, diced
- 35g chopped walnuts
- 1 tsp ground cinnamon
- 300g low-fat Greek yoghurt, to serve
Method
Heat the oven to 190°C/170°C fan.
Mix pears with fresh ginger, lemon, cornflour and half the sugar in a baking dish.
Rub butter into flour, then stir in oats, walnuts, cinnamon and remaining sugar.
Scatter the crumble loosely over the fruit and bake for 30–35 minutes until bubbling and golden.
Rest for 10 minutes and serve warm with yoghurt.

Comforting without being overly sweet. My family wanted more crumble topping, but I liked the fruit-forward proportions.
John RedwoodI used Conference pears that were still slightly firm, and they kept their shape well. Yoghurt was a better partner than cream.
Roger ThorogoodFresh ginger in the pear filling gave a lovely clean heat that ground ginger alone never manages. The topping stayed crisp.
