Ingredients
- 600g salmon fillets
- 2 lemons, zest and 65ml juice
- 2 tbsp pure maple syrup
- 1 tbsp Dijon mustard
- 1 garlic clove, grated
- 1 tsp olive oil
- 300g cooked wild rice blend
- 300g asparagus
- 200g carrots, roasted
- 2 tbsp chopped parsley
Method
Whisk lemon zest and juice with maple syrup, mustard, garlic and oil.
Brush half over the salmon and leave for 10 minutes.
Roast at 210°C/190°C fan for 10–13 minutes, glazing once more.
Steam the asparagus and warm the wild rice while the salmon cooks.
Serve with roasted carrots, parsley and the remaining cooked tray glaze.

My first attempt at Canadian Maple Lemon Salmon was a success, with one small note for next time. My glaze darkened fast at the edges, so I moved the tray down one shelf near the end.
