Ingredients
- 450g self-raising flour
- 2 tsp baking powder
- 100g cold butter, cubed
- 180g mature cheddar, grated
- 1 tsp mustard powder
- 2 eggs
- 170ml milk, plus extra for brushing
- Pinch cayenne pepper
- Pinch of salt
Method
Heat the oven to 220C/200C fan/gas 7 and line a baking tray.
Rub the butter into the flour, baking powder, mustard powder, cayenne, and salt.
Stir through most of the cheddar, reserving a little for the tops.
Beat the eggs with the milk and mix into the dry ingredients to make a soft dough.
Pat to 3cm thick, stamp out rounds, brush with milk, and sprinkle with the reserved cheese.
Bake for 12-15 minutes until well risen and golden.
