Ingredients
- 650g hake fillets
- 1 tbsp olive oil
- Small handful parsley, chopped
- 1 tbsp red wine vinegar
- 1 garlic clove, crushed
- 1 tsp dried oregano
- 1 red chilli, finely chopped
- 450g roasted squash
- 200g green salad
- Black pepper
Method
Check the fish for bones, pat it dry, and prepare the vegetables and sides before cooking.
Mix parsley, vinegar, garlic, oregano, chilli, and olive oil into a light chimichurri.
Bake or grill the hake until it flakes easily.
Spoon over chimichurri and serve with roasted squash and salad.
