Ingredients
- 600g chicken breast, cut into strips
- 2 lemons, zest and 90ml juice
- 45g cornflour
- 1 egg white
- 1 tbsp light soy sauce
- 1 tbsp vegetable oil
- 1 tbsp clear honey
- 150ml chicken stock
- 1 tsp grated fresh ginger
- 300g cooked jasmine rice
- 250g steamed broccoli
Method
Mix chicken with egg white, soy sauce and half the cornflour.
Stir-fry in batches with oil until golden and cooked, then set aside.
Whisk lemon zest and juice, honey, stock, ginger and remaining cornflour.
Bubble the sauce until translucent and glossy, then toss through the chicken.
Serve immediately with jasmine rice and broccoli.

My first attempt at Chinese Fresh Lemon Chicken was a success, with one small note for next time. I reduced the honey by a teaspoon and still had a nicely balanced glossy sauce.
