Ingredients
- 650g white fish fillets
- 1 tbsp olive oil
- 1 orange, juiced
- 1 lime, juiced
- 3 garlic cloves, crushed
- 1 tsp ground cumin
- 1 tsp dried oregano
- 300g black beans
- 300g cooked rice
- Small handful coriander
Method
Check the fish for bones, pat it dry, and prepare the vegetables and sides before cooking.
Mix orange, lime, garlic, cumin, oregano, and a little oil, then brush over the fish.
Bake at 190C for 10-12 minutes until just cooked.
Serve with black beans, rice, and coriander.
