Ingredients

  • 650g pikeperch or zander fillets
  • 1 tsp rapeseed oil
  • 1 lemon, juiced
  • Small handful dill, chopped
  • 450g boiled potatoes
  • 250g cooked beetroot, diced
  • 1 cucumber, sliced
  • 1 tbsp cider vinegar
  • Black pepper
  • Parsley to finish

Method

Check the fish for bones, pat it dry, and prepare the vegetables and sides before cooking.

Season the fish with lemon, dill, rapeseed oil, and black pepper.

Bake at 190C until the fillets flake easily.

Serve with potatoes, beetroot, cucumber, and parsley.
