Ingredients

  • 300g dried black beans, soaked overnight
  • 250g pork shoulder, diced
  • 150g smoked sausage, sliced
  • 1 onion, chopped
  • 3 garlic cloves, crushed
  • 2 bay leaves
  • 1 orange, halved
  • 1 tbsp vegetable oil
  • 700ml water or stock
  • Parsley to finish

Method

Brown the pork and sausage in oil, then remove.

Cook onion and garlic until soft.

Add soaked beans, bay leaves, meat, orange halves, and stock.

Simmer gently for 1 1/2-2 hours until the beans and pork are tender.

Remove orange and bay, adjust seasoning, and finish with parsley.
