Ingredients

  • 650g trout fillets
  • 1 tsp rapeseed oil
  • Small handful coriander
  • Small handful parsley
  • 1 garlic clove, crushed
  • 1 lemon, juiced
  • 1 tsp ground coriander
  • 450g roasted potatoes
  • 200g cucumber salad
  • Black pepper

Method

Check the fish for bones, pat it dry, and prepare the vegetables and sides before cooking.

Blend coriander, parsley, garlic, lemon, ground coriander, and a splash of water into a fresh herb sauce.

Bake the trout with a little oil and black pepper until just cooked.

Spoon over herb sauce and serve with potatoes and cucumber salad.
