Ingredients
- 600g skinless chicken thighs, chopped
- 30g fresh ginger, grated
- 1 onion, chopped
- 3 garlic cloves, crushed
- 1 red chilli, chopped
- 1 tbsp groundnut oil
- 400g chopped tomatoes
- 120g smooth peanut butter
- 500ml chicken stock
- 300g sweet potato, cubed
- 250g cooked brown rice
- Small handful coriander
Method
Brown the chicken in the oil in a large casserole, then lift onto a plate.
Cook the onion until soft; add ginger, garlic and chilli for 1 minute.
Add tomatoes, peanut butter and stock, stirring until smooth.
Return the chicken with sweet potato and simmer for 25 minutes until tender.
Check the seasoning, scatter with coriander and serve with brown rice.
