Ingredients
- 600g tilapia fillets
- 2 lemons, zest and 75ml juice
- 25g fresh ginger, grated
- 3 garlic cloves, crushed
- 1 red chilli, chopped
- 1 tsp ground coriander
- 1 tbsp groundnut oil
- 300g cooked tomato rice
- 250g steamed greens
- Small handful coriander
Method
Mix lemon, ginger, garlic, chilli, coriander and oil.
Rub over the tilapia and marinate for 20 minutes.
Grill the fish on a lined tray until lightly charred and just cooked.
Spoon the hot tray juices back over the fillets.
Serve with tomato rice, greens, coriander and lemon wedges.
