Ingredients
- 650g sardine fillets or small whole sardines, cleaned
- 1 tbsp olive oil
- 2 garlic cloves, crushed
- 1 lemon, zested and cut into wedges
- 1 tsp smoked paprika
- Small handful flat leaf parsley, chopped
- 300g boiled new potatoes
- 200g tomato and cucumber salad
- Black pepper
Method
Check the fish for bones, pat it dry, and prepare the vegetables and sides before cooking.
Rub the sardines with olive oil, garlic, lemon zest, paprika, and black pepper.
Grill over a high heat for 2-3 minutes per side until the fish is just cooked and lightly charred.
Serve with lemon wedges, parsley, boiled potatoes, and salad.
