Ingredients
- 500g strong white bread flour
- 7g fast-action dried yeast
- 1 tsp salt
- 325ml warm water
- 2 tbsp olive oil
- 250g passata
- 1 garlic clove, crushed
- 250g mozzarella, torn
- Small handful basil leaves
- Semolina or flour, for dusting
Method
Mix the flour, yeast, salt, warm water, and olive oil into a soft dough.
Knead for 8-10 minutes, then cover and rise until doubled.
Heat the oven as hot as it will go with trays or a pizza stone inside.
Divide the dough, roll or stretch into bases, and spread with passata mixed with garlic.
Top with mozzarella and bake for 8-12 minutes until the crust is blistered.
Finish with basil and a drizzle of olive oil.
