Ingredients

  • 650g haddock fillets, cut into chunks
  • 1 tsp rapeseed oil
  • 1 onion, chopped
  • 1 celery stick, sliced
  • 450g potatoes, diced
  • 2 carrots, diced
  • 700ml fish stock
  • 150ml unsweetened oat milk
  • Small handful parsley
  • Black pepper

Method

Check the fish for bones, pat it dry, and prepare the vegetables and sides before cooking.

Soften the onion and celery in rapeseed oil, then add potatoes, carrots, and stock.

Simmer until the vegetables are tender, then add haddock and oat milk for the final 5 minutes.

Finish with parsley and black pepper.
