Ingredients
- 650g white fish fillets
- 1 tsp rapeseed oil
- 2 garlic cloves, crushed
- 2 shallots, chopped
- 15g fresh ginger, grated
- 1 tsp turmeric
- 1 lemongrass stalk, finely sliced
- 1 tomato, chopped
- Banana leaves or baking paper
- 250g steamed rice
Method
Check the fish for bones, pat it dry, and prepare the vegetables and sides before cooking.
Rub the fish with garlic, shallot, ginger, turmeric, lemongrass, tomato, and a little oil.
Wrap in banana leaves or baking paper and bake at 190C for 14-16 minutes.
Serve with steamed rice and any cooking juices from the parcel.
