Ingredients
- 320g basmati rice, rinsed
- 2 lemons, zest and 80ml juice
- 50g roasted peanuts
- 1 tbsp rapeseed oil
- 1 tsp mustard seeds
- 1 tsp cumin seeds
- 12 curry leaves
- 1/2 tsp turmeric
- 1 green chilli, sliced
- 600ml water
- Small handful coriander
Method
Cook the rice with turmeric and water until tender, then spread out to steam dry.
Heat oil and let mustard and cumin seeds crackle.
Add curry leaves, chilli and peanuts and stir until fragrant.
Fold in the rice with lemon zest, taking care not to crush the grains.
Remove from the heat, add lemon juice and coriander, and serve warm or at room temperature.
