Ingredients

  • 2 chicken breast fillets
  • 40g plain flour
  • 1 egg, beaten
  • 80g panko breadcrumbs
  • Vegetable oil for frying
  • 4 slices soft white bread
  • 2 tbsp tonkatsu sauce
  • 80g finely shredded cabbage
  • 1 tbsp mayonnaise

Method

Flatten the chicken to an even thickness and season.

Coat in flour, dip in egg, then press into panko.

Shallow-fry for 4-5 minutes each side until golden and cooked through.

Drain and rest briefly before slicing.

Spread bread with mayonnaise and tonkatsu sauce, then add cabbage and chicken.

Trim crusts if desired and cut into neat halves.
