Ingredients
- 4 lamb shanks
- 1 tbsp olive oil
- 1 onion, chopped
- 2 carrots, chopped
- 2 garlic cloves, crushed
- 1 tbsp plain flour
- 600ml lamb stock
- 150ml red wine
- 2 tbsp mint sauce
- 1 tbsp tomato puree
- 2 rosemary sprigs
- Salt and black pepper
Method
Heat the oven to 160C/140C fan/gas 3.
Brown the lamb shanks in oil, then set aside.
Cook the onion, carrots, and garlic until softened. Stir in flour and tomato puree.
Add wine, stock, rosemary, and mint sauce, then return the lamb.
Cover and cook in the oven for 2 1/2-3 hours until tender.
Reduce the gravy if needed and serve with mash and vegetables.
