Ingredients

  • 1 tbsp olive oil
  • 1 lemon, juiced and zested
  • 2 garlic cloves, crushed
  • 500g kumara or sweet potato, cubed
  • 200g green beans
  • Small handful parsley
  • Black pepper
  • Lemon wedges
  • 1 tsp dried thyme

Method

Check the fish for bones, pat it dry, and prepare the vegetables and sides before cooking.

Roast kumara with garlic, thyme, lemon zest, and a little oil until nearly tender.

Add the hoki and green beans to the tray and bake until the fish flakes.

Serve with parsley and lemon wedges.
