Ingredients

  • 400g spaghetti
  • 400g lean beef mince or turkey mince
  • 1 onion, finely chopped
  • 2 carrots, finely diced
  • 2 celery sticks, finely diced
  • 2 garlic cloves, crushed
  • 500g passata
  • 1 tbsp tomato puree
  • 1 tsp dried oregano
  • Small handful basil
  • Salt and black pepper

Method

Cook the onion, carrots, celery, and garlic in a splash of water or a little oil until softened.

Add the lean mince and cook until browned.

Stir in tomato puree, passata, oregano, salt, and pepper.

Simmer for 30-40 minutes until rich and thick.

Cook the spaghetti until al dente, then toss with the ragu and basil.

Serve with a light grating of parmesan if liked.
