Ingredients

  • 650g trout fillets
  • 1 tbsp maple syrup
  • 1 tbsp Dijon mustard
  • 1 tbsp lemon juice
  • 1 tsp rapeseed oil
  • 450g roasted root vegetables
  • 200g green beans
  • Small handful parsley
  • Black pepper
  • Lemon wedges

Method

Check the fish for bones, pat it dry, and prepare the vegetables and sides before cooking.

Mix maple syrup, mustard, lemon juice, oil, and black pepper, then brush over the trout.

Bake at 190C for 10-12 minutes until the trout is just cooked.

Serve with roasted roots, green beans, parsley, and lemon.
