Ingredients

  • 4 cod fillets, about 150g each
  • 2 tbsp olive oil
  • 1 red onion, thinly sliced
  • 2 garlic cloves, sliced
  • 250g cherry tomatoes, halved
  • 80g mixed pitted olives
  • 1 tbsp capers
  • 1 lemon, sliced
  • 1 tsp dried oregano
  • Small handful parsley, chopped
  • Salt and black pepper

Method

Heat the oven to 200C/180C fan/gas 6.

Put the onion, garlic, tomatoes, olives, capers, lemon, oregano, and olive oil in a baking dish. Season lightly and bake for 12 minutes.

Nestle the cod fillets into the vegetables, spoon a little of the pan juice over the top, and season again.

Bake for 12-15 minutes until the cod flakes easily and the tomatoes are soft.

Scatter with parsley and serve with salad, potatoes, or warm bread.
