Ingredients
- 650g cod loin
- 1 tbsp white miso paste
- 1 tbsp reduced-salt tamari
- 1 tbsp mirin
- 1 tsp sesame seeds
- 300g cooked sushi rice
- 200g edamame beans
- 200g cucumber, sliced
- 2 spring onions, sliced
- Pickled ginger to serve
Method
Check the fish for bones, pat it dry, and prepare the vegetables and sides before cooking.
Brush the cod with miso, tamari, and mirin, then leave for 15 minutes while the rice and vegetables are prepared.
Bake at 190C for 10-12 minutes until the cod flakes and the glaze is lightly caramelised.
Serve over rice with edamame, cucumber, spring onions, sesame seeds, and pickled ginger.
