Ingredients

  • 500g strong white bread flour
  • 7g fast-action dried yeast
  • 1 tsp salt
  • 2 tbsp sugar
  • 1 egg
  • 2 tbsp honey, plus 3 tbsp for boiling water
  • 220ml warm water
  • 2 tbsp vegetable oil
  • Sesame seeds or poppy seeds for coating

Method

Mix the flour, yeast, salt, and sugar in a large bowl.

Whisk the egg, honey, warm water, and oil, then mix into the flour.

Knead for 8-10 minutes until smooth and elastic.

Cover and leave to rise for about 1 hour.

Divide into 10 pieces, roll into ropes, and join into rings.

Simmer a large pan of water with honey and boil the bagels for 45 seconds per side.

Coat with sesame or poppy seeds and bake at 220C for 15-18 minutes until glossy and golden.
