Ingredients

  • 750g beef shin, cut into chunks
  • 1 tbsp olive oil
  • 2 onions, sliced
  • 3 garlic cloves, crushed
  • 2 tsp ras el hanout
  • 1 tsp ground cinnamon
  • 400ml beef stock
  • 120g prunes
  • 40g toasted almonds
  • 300g couscous to serve
  • Small handful coriander to finish

Method
