Ingredients
- 200g brown lentils
- 150g basmati rice
- 3 large onions, thinly sliced
- 4 tbsp olive oil
- 1 tsp ground cumin
- 1/2 tsp ground cinnamon
- 700ml water or vegetable stock
- Lemon wedges
- Salt and black pepper
Method
Cook the onions slowly in olive oil for 25-30 minutes until deep golden and sweet.
Simmer lentils in water for 15 minutes, then add rice, cumin, cinnamon, salt, and pepper.
Cook for 15-18 minutes until the grains are tender and liquid absorbed.
Fold through half the onions and rest for 10 minutes.
Serve topped with the remaining onions and lemon wedges.
