Ingredients

  • For the base:
  • 120g butter
  • 50g caster sugar
  • 30g cocoa powder
  • 1 egg, beaten
  • 180g digestive biscuit crumbs
  • 80g desiccated coconut
  • 60g chopped walnuts
  • For the middle:
  • 100g butter, softened
  • 250g icing sugar
  • 2 tbsp custard powder
  • 2 tbsp milk
  • For the top:
  • 150g dark chocolate
  • 25g butter

Method

Melt the butter, sugar, and cocoa gently in a pan.

Whisk in the beaten egg and cook for 1 minute, stirring constantly.

Stir in biscuit crumbs, coconut, and walnuts.

Press firmly into a lined square tin and chill.

Beat the middle-layer butter, icing sugar, custard powder, and milk until smooth.

Spread over the base and chill again.

Melt the chocolate with butter, spread over the custard layer, and chill until set.

Cut into small squares with a warm knife.
