Ingredients

  • 320g all-butter puff pastry
  • 250ml whole milk
  • 30g plain flour
  • 150g caster sugar
  • 75ml water
  • 1 cinnamon stick
  • 2 strips lemon zest
  • 4 large egg yolks
  • 1 tsp vanilla extract
  • Ground cinnamon to serve

Method

Roll the pastry tightly into a log, slice into 12 pieces, and press each piece into a greased muffin tin.

Whisk a little of the milk with the flour to make a smooth paste.

Heat the remaining milk until steaming, then whisk it into the flour paste.

Simmer the sugar, water, cinnamon, and lemon zest for 3 minutes to make a light syrup.

Whisk the syrup slowly into the milk mixture, then cool for 5 minutes.

Whisk in the egg yolks and vanilla, then strain.

Fill the pastry cases two-thirds full and bake at 240C for 12-15 minutes until blistered and golden.
