Ingredients

  • 700g skinless chicken thighs
  • 2 lemons, zest and 75ml juice
  • 3 garlic cloves
  • 2 red chillies
  • 1 tsp smoked paprika
  • 1 tsp dried oregano
  • 1 tbsp olive oil
  • 2 red peppers, sliced
  • 600g potatoes, cut into wedges
  • Small handful parsley

Method

Blend lemon zest and juice with garlic, chilli, paprika, oregano and oil.

Coat the chicken in two-thirds of the sauce and marinate for 30 minutes.

Roast potato wedges and peppers at 210°C/190°C fan for 20 minutes.

Add chicken and roast for 25 minutes, brushing with reserved sauce until lightly charred.

Rest briefly and finish with parsley and extra lemon if desired.

My first attempt at Portuguese Lemon Piri-Piri Chicken was a success, with one small note for next time. One chilli was enough for our table, but the marinade proportions worked very well.

I enjoyed making Portuguese Lemon Piri-Piri Chicken and the instructions behaved exactly as promised. Roasting the peppers and potatoes beneath the chicken caught all the spicy juices.
