Ingredients

  • 900g floury potatoes, cut into chips
  • 2 tbsp rapeseed oil
  • 250g fresh cheese curds
  • For the gravy:
  • 40g butter
  • 40g plain flour
  • 500ml beef stock
  • 1 tsp Worcestershire sauce
  • Black pepper
  • Salt to taste

Method

Heat the oven to 220C and line two baking trays.

Toss the potatoes with oil and a little salt, then roast for 35-40 minutes until crisp and golden.

Melt the butter in a saucepan and stir in the flour.

Cook the roux for 2 minutes, then whisk in the beef stock gradually.

Simmer until glossy and thickened, then add Worcestershire sauce and pepper.

Pile the hot chips into bowls, scatter over cheese curds, and pour over hot gravy so the curds soften.
