Ingredients
- 300g yellow split peas, rinsed
- 1 tbsp rapeseed oil
- 1 onion, finely diced
- 2 carrots, diced
- 2 celery sticks, diced
- 2 garlic cloves, crushed
- 200g cooked ham, diced
- 1 bay leaf
- 1.4 litres chicken stock
- 1 tsp dried thyme
- Black pepper
- Parsley to finish
Method
Warm the oil in a large pan and cook the onion, carrots, and celery for 8 minutes.
Add the garlic and cook for 1 minute.
Stir in the split peas, ham, bay leaf, stock, thyme, and pepper.
Bring to a simmer, cover partly, and cook gently for 60-75 minutes.
Stir occasionally until the peas collapse and the soup thickens.
Remove the bay leaf, adjust seasoning, and finish with parsley.
