Ingredients

  • 450g self-raising flour
  • 2 tsp baking powder
  • 100g cold butter, cubed
  • 60g caster sugar
  • 160g mixed dried fruit
  • 2 eggs
  • 180ml whole milk, plus extra for brushing
  • Pinch of salt

Method

Heat the oven to 220C/200C fan/gas 7 and line a baking tray.

Rub the butter into the flour, baking powder, and salt until the mixture resembles breadcrumbs. Stir in the sugar and dried fruit.

Beat the eggs with the milk, then add enough to make a soft dough.

Pat the dough to about 3cm thick, stamp out rounds, and place on the tray.

Brush with milk and bake for 12-14 minutes until risen and golden.

Cool slightly before serving with butter or jam.
