Ingredients

  • 650g firm white fish fillets
  • 1 tbsp rapeseed oil
  • 3 onions, thinly sliced
  • 2 garlic cloves, crushed
  • 2 lemons, juiced
  • 1 tbsp Dijon mustard
  • 1 tsp smoked paprika
  • 1 bay leaf
  • 320g cooked rice
  • Small handful parsley

Method

Check the fish for bones, pat it dry, and prepare the vegetables and sides before cooking.

Marinate the fish briefly with lemon juice, mustard, garlic, paprika, and black pepper.

Soften the onions in rapeseed oil, add the bay leaf, then place the fish on top and cook gently until just done.

Serve the fish and onions over rice with parsley and a squeeze of lemon.
