Ingredients
- 225g self-raising flour
- 1 tsp baking powder
- 2 tsp cinnamon
- 1/2 tsp mixed spice
- 150g soft brown sugar
- 2 eggs
- 150ml sunflower oil
- 3 eating apples, two diced and one sliced
- 60g walnuts, chopped
- 1 tbsp demerara sugar
Method
Heat the oven to 180C/160C fan/gas 4 and line a 20cm cake tin.
Mix the flour, baking powder, spices, and sugar.
Whisk the eggs and oil, then fold into the dry ingredients with the diced apples and walnuts.
Spoon into the tin and arrange the sliced apple on top.
Sprinkle with demerara sugar and bake for 45-50 minutes until cooked through.
Cool before slicing.
