Ingredients

  • 200g medium oatmeal
  • 150g plain flour
  • 2 tsp ground ginger
  • 1 tsp mixed spice
  • 1 tsp bicarbonate of soda
  • 120g butter
  • 120g black treacle
  • 120g golden syrup
  • 100g dark brown sugar
  • 1 large egg
  • 150ml milk

Method

Heat the oven to 160C/140C fan and line a 20cm square tin.

Mix oatmeal, flour, spices, and bicarbonate of soda.

Melt butter, treacle, syrup, and sugar gently, then cool slightly.

Stir wet mixture into dry ingredients, then add egg and milk.

Pour into the tin and bake for 45-55 minutes.

Cool, wrap, and leave for a day or two for the classic sticky texture.
