Ingredients

  • 450g self-raising flour
  • 2 tsp baking powder
  • 100g cold butter, cubed
  • 120g Stilton, crumbled
  • 70g walnuts, chopped
  • 2 eggs
  • 170ml milk, plus extra for brushing
  • 1 tsp English mustard
  • Black pepper

Method

Heat the oven to 220C/200C fan/gas 7 and line a baking tray.

Rub the butter into the flour and baking powder.

Stir in the Stilton, walnuts, mustard, and black pepper.

Beat the eggs with the milk and mix into a soft dough.

Pat to 3cm thick, stamp out rounds, and brush with milk.

Bake for 12-15 minutes until risen, golden, and fragrant.
