Ingredients

  • 700g beef steak, cut into thin strips
  • 2 tbsp groundnut oil
  • 3 tbsp ground roasted peanuts
  • 2 tsp smoked paprika
  • 1 tsp ground ginger
  • 1 tsp garlic powder
  • 1 tsp cayenne pepper
  • 1 tsp onion powder
  • 1 tsp salt
  • 1 red onion, sliced to serve
  • 2 tomatoes, sliced to serve

Method

Prepare the ingredients and trim any large visible pieces of fat from the beef.

Heat the oil in a heavy pan over a medium-high heat, then brown the beef in batches so it colours rather than steams.

Add the aromatics and spices, stirring until they smell fragrant.

Shape or thread the beef, then grill until well coloured outside and cooked through. Rest briefly before serving with the suggested sides.

Taste, adjust seasoning, and serve with the suggested side. Nutrition values are estimates for planning and will vary with exact ingredients and portion size.

Suya Beef Skewers (Nigeria) is a keeper for me. Clear method, good portion size, and enough character to make it feel like travel food.

I liked the balance in Suya Beef Skewers (Nigeria). The beef stayed tender and the seasoning made the whole plate feel generous.

The Suya Beef Skewers (Nigeria) worked beautifully and gave a real sense of Nigeria without feeling difficult for a home kitchen.
