Ingredients

  • 650g salmon fillets
  • 1 tbsp wholegrain mustard
  • 1 tbsp lemon juice
  • 1 tsp honey
  • Small handful dill, chopped
  • 400g boiled new potatoes
  • 200g cucumber, sliced
  • 100g radishes, sliced
  • 1 tbsp cider vinegar
  • Black pepper

Method

Check the fish for bones, pat it dry, and prepare the vegetables and sides before cooking.

Mix mustard, lemon juice, honey, dill, and black pepper, then brush over the salmon.

Bake at 190C for 10-12 minutes until the salmon is just cooked.

Serve with new potatoes and a sharp cucumber-radish salad.
