Ingredients

  • 650g firm white fish, cut into large cubes
  • 1 tbsp rapeseed oil
  • 1 lemon, juiced
  • 2 garlic cloves, crushed
  • 1 tsp ground cumin
  • 1 tsp paprika
  • 1 red onion, cut into wedges
  • 2 peppers, cut into chunks
  • 300g cooked rice
  • Small handful parsley

Method

Check the fish for bones, pat it dry, and prepare the vegetables and sides before cooking.

Marinate the fish with lemon, garlic, cumin, paprika, and a little oil.

Thread with onion and peppers, then grill or bake until the fish is just cooked.

Serve with rice and parsley.
